"My overridding goal was to design a 10 gallon system wherein the pump or gravity would move all the liquid, thus sparing my cranky lower back. The central manifold accomplishes this because hot water can be directed from the kettle to the mash-tun or to the HLT, and wort can be recirculated or directed to the kettel during the sparge. I can fill the kettle with a garden hose, and the finished, chilled wort is gravity-drained into a 12-gallon plastic primary which sits on the a roll-way cart. Thus I only lift the beer after it has been split into 5-gallon lots in the glass secondaries. A secondary goal was to construct a system of lightweight components that could be broken down and stored in the garage rafters, thus keeping the garage clear for its primary function as a woodshop (we never put the cars inside!)."
