 Five-Malt Porter
 
This is a brown porter that emphasizes the chocolate malt.  Fans of the
robust style who favor black patent malt may wish to adjust accordingly.
 
Recipe is based on 11 gallons at the end of the boil (I leave about 1
gallon in the kettle with the trub and hops).  Assumed RIMS efficiency is
90%.
 
 14.5 lb pale malt
 1.5 lb brown malt
 2 lb crystal (90 L)
 1 lb chocolate
 0.25 lb black patent
 
 2 oz Challenger (8.2% AA) at 60 min
 1.5 oz Fuggles (4.5% AA) at 15 min
 1 oz Fuggles (4.5% AA) at 3 min
 
 YEAST: White Labs 002 English Ale (or equivalent)
 
 Mash at 155 F for 90 min, and mash out/sparge at 168 F.   60 minute boil.
 
 O.G. = 1.055, F.G. ~ 1.018
 Bitterness ~ 39 IBUs
