• 110 dough in with 4 gal + 1tsp gypson + establish grain bed 15 min. add 2 gal @150 full heat & pump hard I want to go past 113 to 135 as quickly as possible
• 135 protien rest & adjust pH to 5.2x 12 min. my water supply is pH 8.4    I use this temp to adjust pH with acid as quickly as possible big advantage with RIMS easy to add pH modifier pump 10 min or so then check and adjust if req.
• 148x 68 min I believe I consistly get complete conversion in 40 min because this seems to good to be true I add 20 or 30 min.
• 167 x 5 min mash out
• 167 sparge with 5 gal + 2 tsp gypson pH 5.7
• 90 min boil 3oIBU cascade 60 min 3 tsp irish moss 30 min force chill to 50 deg pitch 1056 in 800 ml starter
• primary glass for 12 days @ 60 deg
• secoundary glass 18 days fg 1.009  dry hop last 7 days 1/2 oz cascade + 1/2 oz centennial
• charge 3/4 cup corn suger bottle
